I absolutely love breakfast foods! I don’t know why, but ever since I was little I have loved eating it. That is why I wanted to put together a healthy and easy to make breakfast recipe. The thing I love about this recipe is that you can have it for lunch or even “brinner” which means breakfast for dinner. Not only is this recipe healthy, but it is always good to try and get some vegetables in at the beginning of the day. In this recipe that is what you will be doing!
I make mine in my cast iron skillet. Any skillet will work, but I love cooking in cast iron.
Total Time: 15 minutes
What you need:
1/2 Yellow Squash
5 Cherry Tomatoes
1 Tbsp Coconut oil
Salt and Pepper
1. Add some coconut oil to your skillet.
2. Wash all your vegetables, and then cut up your zucchini and yellow squash into halves or quarters (whatever you prefer).
3. Cut up your cherry tomatoes into halves.
4. Add all the cut up vegetables into your skillet with the coconut oil in it. Put it on medium heat and stir the vegetables around as needed in order for them to cook through.
5. Once they are cooked, I like to add them to whatever dish I will be using.
6. Then, I scramble the eggs in the same cast iron skillet. You can add more coconut oil before you start, but try not adding too much.
7. I add the scrambled eggs to the dish with the vegetables and mix them around. You can add salt and pepper to taste.
This is one of my go to recipes if I want a quick, but healthy meal. It keeps you feeling full for long since it has so much protein:)

One of my favorite dishes to serve is roasted vegetables! It not only is easy, but there are so many varieties of dishes you could make. If you are like me, I like making the dishes that are easy to make that are super quick. You can use brussel sprouts, broccoli, asparagus, green beans, peppers, onions, and mostly any other vegetable you can think of. I have used asparagus for this example because it is one of my favorite veggies to roast. Before you start preparing your vegetables, preheat the oven to 350 degrees.
Make sure you wash your vegetables, then cut them/prepare them how you would like. When I make broccoli I like making them into smaller pieces, but when I make asparagus all I do is wash it and chop off the very bottom.
In order to ensure easy clean up you can put a piece of aluminum foil in your pan. You can use any pan you would like to use to cook them, but I like using a baking sheet so that I can space out my veggies evenly. Make sure if you do this step that you put the shiny part of the foil down so that the dull part of the is facing up. If you keep the shiny part up, then it reflects heat and doesn’t cook your food as well.
When your foil is in place, then you can add your veggies. Try to space them out on the pan a little bit in order for them to cook evenly.
Now you can add just a little bit of olive oil, coconut oil, or grapeseed oil. Whatever your preference works!
Lastly, chop up 1 or 2 cloves of garlic (depending on how much vegetables you are using) and add them in.
Mix all these ingredients together in the pan. I like to use a spatula, but you could use other utensils as well.
Now place the pan in the oven and bake from 10-20 minutes depending on the vegetable you have chosen to use:)
You can play around with the time depending on the vegetable, your oven settings, and depending on the quantity of veggies you have to cook. I cooked my asparagus for 15 minutes and it was perfect!
